Apparently I am behind the curve on this dish. No wonder though – I am not on a permanent hunt for endless keto variations and substitutes of traditional foods. This is a stage many go through at the beginning of transformation – each former favorite needed to be replaced, so we seek keto variations of pastas, pizzas, mashed potato etc. Later on, approach to food simplifies for most as our taste preferences adjust and we no longer need crutches. This new (for me at least) find though is different, as this variation of waffle is very convenient and really simple to make.
First, the name. It’s known on the web as chaffles – combo of cheese and waffles. I am not a fan of the name but you need it to search for various recipes if you want the variety and really, what does it matter, right? Call it any way you fancy as long as it tastes right!
Second, the basic idea: you mix an egg and shredded cheese and pour the batter in the preheated waffle maker. Five minutes later you have your waffle. OK, chaffle, grrr. One egg requires half cup of shredded cheese.
Third, a few details. Spray the waffle maker to prevent sticking. Pick mozzarella for plain taste, cheddar for more bite, mix mozzarella and Parmesan, etc. Add cinnamon, or cream cheese, or garlic, or small pieces of dried fruit for variations of taste. Add some almond or coconut flour for bread-like texture. Some variations suggest adding baking powder or Psyllium husk for texture; I haven’t tried it so more power to you if you are curious. Use any topping you can think of. Let it cool off to become crisper. Keep it in the fridge or even freeze it if needed. Reheat it in the toaster or oven.
For my first experiment I used 2 eggs, 1 cup of cheese (3/4 of mozzarella and 1/4 of Parmesan), 2 tsp of coconut flour and some cinnamon. Let the mix settle for a few minutes while heating up the waffle maker. Preheated the waffle maker until green light came on, sprayed some oil and put the mix in, evening it out before closing the cover. Steam started coming out in a minute or so until subsiding by the 4 min mark. A few photos so you can visualize just how conventional-waffle-like it is (sorry about phone image quality):
Waffle maker opened after 5 minutes, steam almost ceased to come out.
Waffles can be taken out just like conventional ones; maker’s plates were clean. A few minutes later, you can cut or break them in parts.
